Crust:Combine yeast, water, and honey in a large bowl. Stir and let stand for 5 minutes. Beat in salt, flours, and cornmeal with a wooden spoon until too thick to mix then turn onto a floured surface and knead for about 5 minutes. Grease mixing bowl with olive oil. Return dough to bowl. Brush top surface with oil and let rise in a warm place for about one hour or until doubled in bulk. Preheat oven to 425. Oil a baking tray. Punch dough to deflate it and turn it our on to the floured surface. Divide dough into 6-8 equal parts, and knead each part into a ball. Roll each ball into a circle or oval about 1/4 inch thick. Place about 1/4 cup filling on one side and carefully stretch the other side of the dough over the filling. Crimp the edges firmly with the flat sied of a fork. Prick with fork a few timews and place on prepared tray. Bake 15 min. Cool for 10 min before eating. Filling: Saute ingredients on med heat to tender. Fill calzone,top w/ cheese. Fold,crimp,and bake as above. |
