RECIPE FOR WINTER SAUERKRAUT
1/3 C Walnut oil
2 Tb. Yellow mustard seeds
3 medium Yellow onions, peeled and sliced
Salt and Pepper to your taste
2 Cups stock, vegetable or chicken
2 lbs. sauerkraut, rinsed
1 Tbs fresh ginger, grated
15 Juniper berries
Heat oil in a large skillet over medium heat. Add mustard seeds and cook, stirring frequently until they begin to pop. Reduce heat to low , add onions, Salt and Pepper to your taste, cook, stirring occasionally until onions are very soft (about 15 min.). Add stock, kraut and ginger. Add juniper berries (berries can be stirred in or tied in cheesecloth) remove berries before serving.
Cook, stirring occasionally, adding water if mixture becomes too dry, for 1 1/2 hr.
