CARROT GINGER STIRFRY

1 1/2 lbs. organic carrots, thinly sliced
1 Tbsp. peanut oil
2 tsp. sesame oil
1 tsp. organic fresh ginger or crystallized ginger, minced
4 scallions, chopped

Heat oils in a large skillet or wok. Add carrots and ginger
and stir fry until carrots are tender-crisp. Garnish with scallions
and serve. Serves 4.
