JIM'S FAVORITE CUCUMBER SALAD
2 large organic cucumbers
1/2 cup sour cream
(you may substitute plain yogurt,
soy sour cream, or plain soy yogurt)
1/4 medium organic red onion
juice from 1 lemon
3 Tbs. fresh dill or 2 - 3 tsp. dried dill weed
1/2 tsp. sugar or honey
sea salt and black pepper
With a vegetable peeler, peel 4 strips of skin from cukes creating a striped appearance. Then slice cukes as thinly as you can. Thinly slice the red onion and mix with cuke slices. Combine remaining ingredients and dress vegetables. Chill well and garnish with sprigs of fresh dill or parsley.
Serves 4 to 6 people.
