PAPAYA SEED SALAD DRESSING
Large Papaya - cut flesh in chunks/reserve the seeds
1/2 cup cider or red wine vinegar
1 Clove Garlic, minced
1 Shallot, minced
Salt & fresh ground pepper
Juice of fresh Lime and zest grated
1/2 teaspoon Dijon Mustard (optional)
Olive Oil
Place 1/2 the papaya chunks in food processor and puree. Add shallot, garlic, seasonings and lime juice and zest. Puree until well blended add vinegar and seeds,blend together. With motor running add oil slowly until emulsified. Season to taste with salt, pepper and sugar or honey.
