Loving Earth Vegan Almond Butter Cups

These Loving Earth Almond Butter Cups are a fun twist on a classic Reese’s. Only 4-ingredients and completely vegan and gluten free. These tasty treats are made using Loving Earth Lemon Cheesecake Chocolate Bars and Base Culture Paleo Gingerbread Almond Butter.

Loving Earth Almond Butter Cups Recipe

Prep Time: 5 Minutes

Refrigeration Time: 30 Minutes

Yields: 9 Standard Cups or About 25 Mini Cups
 

Chocolate Layer Ingredients: 

  • 3 Loving Earth Cheesecake Chocolate Bars

  • 3 Tablespoons Coconut Oil

Almond Butter Filling Ingredients: 

  • ½ Cup Almond Butter

  • 2 Tablespoons Coconut Oil

  • 1 Tablespoon Powdered Sugar

Instructions: 

  1. Line your muffin pan with cupcake liners.

  2. Melt your chocolate bars and coconut oil in a small pot on the stove over medium-low. Mixing continually to ensure they don’t burn.

  3. Pour half of the chocolate mixture into your cupcake liners and reserve the other half for later. Refrigerate the first chocolate layer for about 10 minutes or until firm.

  4. In a stand mixer or with an electric mixer, whisk together your almond butter filling ingredients.

  5. Spoon about a tablespoon of the almond butter mixture onto each of your chocolate cups. Refrigerate again for about 10 minutes to set the almond butter mixture.

  6. Pour your remaining melted chocolate mixture onto each of your cups and refrigerate another 10-20 minutes or until completely firm.

  7. Store in the fridge and enjoy!

    Notes: If you would like to reduce the amount of sugar you can leave out the powdered sugar. While it does add a nice sweet bite to the filling, it is not necessary for the texture.
