5 Healthy Foods in Season During the Winter
With the holidays approaching, you may be eating a variety of food, some of which may not be healthy. If possible, you should try to cut back on sugary foods and hearty meat dishes this season and try fresh, healthy foods. Here are some easy options to prepare.

 

Which Healthy Foods to Enjoy During Winter

1. Cabbage

Cabbage, which are in season from fall through early spring, contain vitamins C and K, folate, and antioxidants. They can be eaten raw, so be sure to add them to your salads. To prolong their storage life, tightly wrap the cabbage heads in plastic and refrigerate them.

2. Brussels Sprouts 

healthy foodsBrussels sprouts are available throughout the year, but their peak season stretches from September to February. They’re excellent sources of potassium, folate, iron, and fiber. Prepare a delicious dish by roasting Brussels sprouts with olive oil and topping it with brown butter.

3. Cranberries

This uniquely American fruit is in season every fall. Cranberries are packed with anthocyanins, which are compounds believed to fight breast, colon, lung, and prostate cancers. Since you can only eat these fresh once a year, buy several bags and store them in your freezer.

4. Parsnips

Parsnips are available in the last quarter of the year, as well as in April and May. These root vegetables are rich in potassium. Their earthy flavors can complement soups and stews, especially when they’re roasted and mixed with Granny Smith apples.

5. Collard Greens

A relative of Brussel sprouts and cabbages, collard greens are excellent nondairy sources of calcium. Frost causes them to produce sweeter leaves, making them a flavorful winter vegetable. You can enjoy your collard greens cooked or raw, but remember to get rid of dry, yellowed, or spotted leaves.
